The menu
The counter omakase runs both seatings, Wednesday through Saturday. The Ozashiki kaiseki is served once a night in the private room behind the shoji door.
Choose the room
Twelve to fourteen courses over ninety minutes. Eight seats, two seatings nightly, Wednesday through Saturday. One menu, set at half past five.
Eight to ten kaiseki courses for four guests behind a sliding shoji door. One seating a night, at half past seven.
Twenty breweries in rotation and a resident brewery each year. The flight is poured alongside the nigiri run.
Fish in every course except the tamago. Tell us forty-eight hours ahead and we will adjust within reason.

How an evening runs
Hiroshi has already walked the Athens central market and the Skala Oropou landing. Whatever is in the room now is what the night will be built from.
The sequence is decided and posted to the Tonight page. Until this moment nobody, including us, knows what the twelve courses are.
Eight guests. Ninety minutes. The door is closed at ten past; the sequence cannot be paused for a late arrival.
Behind the shoji door, four guests begin a ten-course kaiseki that will run past ten.
Eight more. The same menu, a fresh pot of shari, and whatever the first seating did not take of the best fish.
Which is how the street knows the room has finished.
