Tea

Not an afterthought. The soba-cha closes every service, and the sencha opens the Ozashiki.

Two teas

Both from Hatsumomiji, in Uji.

Sencha, first flush

Steeped at seventy degrees for fifty seconds. Grassy and sweet, and it wakes the palate rather than filling it. Served before the Ozashiki kaiseki.

Uji

Soba-cha

Roasted buckwheat, no leaf, no caffeine. It closes every service alongside the tamago, and it is the last thing most guests remember tasting.

Hatsumomiji has sent us tea since the room opened. It is the only supplier that has never changed.
